Title: Multi-Purpose Hamburger Mix

Yield: 5 Units

4 Onions, chopped
2cChopped celery stalks and tops
1/4cOil
4lbLean ground beef
1tsGarlic salt
2tsSalt
1/2tsPepper
3tbWorchestershire sauce
24ozBottle ketchup

In a large skillet or kettle, saute onions and celery in hot oil or drippings (do not brown). Add ground beef and cook, stirring until crumbly and lightly browned. Drain off excess fat. Add remainder of ingredients and simmer for 20 minutes.

To freeze, cook quickly and separate into five 2 cup portions. Store in a covered container or resealable plastic bag.

Sloppy Joes: Thaw as much mix as needed, then heat (may be heated slowly without thawing). Spoon over split, toasted hamburger buns.

Chili Con Carne: Heat desired amount of mix with an equal amount of red kidney beans. Season with chili powder. If desired, top each serving with grated cheddar cheese.

Spaghetti: Thaw desired amount of mix (or heat slowly without thawing). Serve on cooked, drained spaghetti and top with grated Parmesan cheese.

Noodle Casserole: Heat one portion of mix in skillet or casserole dish. Add 8 oz of cooked, drained noodles and a 10 oz package of frozen mixed vegetables (already cooked). Sprinkle with 1/2 c shredded cheddar cheese and chopped fresh parsley. Heat, without stirring, over low heat or in a low oven until cheese melts.

Pizza: Thaw one portion of mix. Spread a prepared pizza crust with tomato sauce and 1/2 cup mix. Sprinkle with garlic salt and oregano. Top with shredded Monterey Jack, mozzarella or Parmesan cheese. Add other toppings as desired, such as pepperoni, mushrooms, bell pepper, etc. Bake at 425øF for 15 to 20 minutes.

Rice Casserole: Heat one portion of mix. Add 2 cups cooked rice, 1 cup frozen whole kernel corn and 1/4 ts thyme. Simmer to blend flavors and heat through.

Tamale Pie Casserole: In a 2 qt casserole, combine 1 portion mix, 1 cup cream-style corn, 1 chopped green pepper, 1 ts chili powder, 1 1/2 cup canned tomatoes and 1 cup pitted ripe olive, chopped. Stir 1/2 cup cornmeal with 1 cup milk. Blend into meat mixture. Bake at 375ø for 1 hour.

Company Casserole: Thaw 2 portions mix. Mix 1 cup cottage cheese with 8 oz cream cheese and 1/4 cup dairy sour cream. Cook 8 oz of noodles and drain. In a buttered 2 qt casserole, place half of the noodles. Cover with half of the mix. Spread half the cheese mixture over top. Repeat layers. Bake at 350øF for 30 to 40 minutes.

Stuffed Green Peppers: Use the "Rice Casserole" mixture above to stuff 8 parboiled green peppers. Top the green peppers with slices of cheese, tomato soup or ketchup to keep the meat mixture moist. Bake at 375øF for about 50 minutes.
